Used by my grandmother and mother, this method is a family method for canning tomatoes. A delicious way to preserve tomatoes for the winter. In winter you will have a wonderful tomato salad with delicious spices on the table. This recipe has become one of our family's favorite recipes. Cooked with love!
Ingredients and preparation:
2.3-2.5 kg of tomatoes
Cut the tomatoes into 4 pieces
6-7 cloves of garlic (2 cloves per 1 jar)
A bunch of dill
A bunch of parsley
Greens at will
Use the stems, don't throw them away
400-450 grams of onions
Wash and sterilize the jars appropriately
I boil each jar for a few minutes
Sterilize the lids by boiling
I use 1.5 liter jars
Place 1 clove of garlic in the bottom of the jar
Black Peppercorns

A layer of onions
Add 1 more clove of garlic

Fill the jar with tomatoes
A layer of onions
dill and parsley
Do the same with the rest of the glasses

dill and parsley
Black Peppercorns
Onion, garlic, dill and parsley
Last layer of onions and greens
Boil the drinking water
Pour the boiling water into the glasses
Close with lids
Leave for 15 minutes to allow the contents of the glasses to warm up
After 15 minutes, drain the liquid into a saucepan
I use a special sieve for this
Now the marinade should be boiled again
For a 1.5 liter jar: 2 teaspoons salt (18 g)
2.5 tablespoons of sugar
1 tablespoon odorless refined oil
Bring the marinade to a boil
Stir well to dissolve all the spices
Pour 25ml of 9% vinegar into each glass
Pour the boiling marinade over the tomatoes
Screw the jars tight
Turn them upside down to check they are tight
Cover with a large warm blanket and let cool completely
Can be kept for one year at room temperature

Cannot wait to try this method of making tomato preserves. My father loved the preserves from this channel that I showed him and I am sure he will love this one, too. He loves preserving vegetables and fruits he harvests from his garden. Usually, it would only by putting it in a jar and covered with salt, with this he will have more variety in making his preserves. I guess it reminds him of his childhood when times were tough and they had to preserve food, even meats, which is then eaten for months. Plus, vegetable preserves are best when paired with any meal as it helps digestion. The means of sanitizing the glass container will be a new thing we can try as a family.

I would like to have a jar sanitizer pot lid that you demonstrated, but they are not available in the USA--in fact, this is the first time I have ever seen one.

@butchbroussard8468. I always just put water in my jars and pressurized them in a pressure canner and processed them 10 minutes to sterilize them.

This is the first I've seen one also, it's just steam sanitizing, why not make your own😉. I'm getting a small electric vegetable steamer with a plastic lid. Cut a hole in the lid to the size of the jar's, and maybe a tiny hole to vent too much steam, Those veggie steamers can get really hot. If it doesn't work, just need to replace the lid😁

Im not sure if its safe for a year without proper water canning or pressure canning. I wish it was that simple but...looks like a good simple recipe which could be canned. I wonder if not pouring the hot liquid to for 10 min and just pouring seasoned marinade in then canning for 30 min would give same results?

That is great to know. I am doing different types of prepping these days and I am not a stickler to what out health organizations say we need to do. Hallo Irina! Auf diese Weise sind Tomaten ein Jahr lang haltbar, sie verderben nicht. Wenn man sich Sorgen macht, dass man sie nicht sterilisieren kann, kann man das gleiche Rezept nur mit Sterilisation machen. Alle Gewürze, Salz, Zucker und Essig in ein Glas geben, mit Wasser übergießen und im Wasserbad sterilisieren.

I'm not sure it should even be done with tomatoes. Not enough acid. Will be OK in the fridge for a bit but not shelf stable.
