Today I bought a collar of 1.3 kg.
I make deep cuts with the narrow blade of a knife.

paprika 1 tsp.
Black ground pepper 1 tsp.
French mustard 1 tsp.
honey 1 tbsp. l.
I pour the marinade over the meat.
I cover the bowl with cling film.
I put the meat in the fridge for 12-24 hours.
I take the marinated meat out of the fridge.
I cut 1.5m of parchment for baking.

I dip the parchment in the water.
I squeeze the parchment, but not very hard.
I spread the meat out on parchment.
I wrap the meat very tightly.
Transfer the wrapped meat to a baking sheet.
I put it in the oven at 160°C for 1.5 hours.

I cut the potatoes into long slices.
I shift the potato slices into a glass or ceramic mold.
I cover them with cling film, poke holes and put them in the microwave for 5 minutes.
Onion 1 pc.
I cut into small cubes.
I dry the potatoes with paper towels.

I add chopped onions.
