Hello friends! Today I show you the Old Homemade Ciabatta recipe! Ciabatta in 2 Hours - a simple and easy recipe!
You will definitely like this Italian bread! If you've never made ciabatta before, then by all means do it!
Ciabatta in 2 hours - very easy! Repeat after me and you will succeed!
The main thing is to cook with joy and love!
Ciabatta Ingredients:
400 ml warm water.
Let's take 100 ml of water from the total volume.
Add 25 g fresh pressed yeast (or 8 g dry yeast).
Add 2 tsp. Sugar (15-20 g).
500 grams of white flour.
You need to take 2 tablespoons of the total amount of flour.
Mix well.
Let rise in a warm place for 15 minutes.
Add the rest of the water.
Sift the flour (a total of 500 g white flour).
Add 1.5 teaspoons of salt (10-12 g).
I have pink Himalayan salt.
Mix well.
This time I kneaded the dough with a mixer.
It took me about 7-10 minutes to complete the test.
Cover the dough and let it rise in a warm place for 15 minutes.
The dough has risen well.
Now we need to fold the dough as I show.
Fold the dough 4-6 times.
Cover the dough and let it rise in a warm place for 15 minutes.
Fold the dough again Fold the dough 4-6 times.
Cover the dough and let it rise in a warm place for 15 minutes.
We must repeat this process 4 times for 15 minutes.
Each time the dough becomes more elastic and pleasant.
Prepare a towel for shaping the dough.
Dust the cloth well with flour.
Sprinkle the table with flour.
Put the dough on the table.
Divide the dough into 6-8 parts (depending on the size of your oven).
Form the bread as I show.
Dust the buns with flour.
Place the bread on a towel.
Repeat after me.
Cover and let rise for 15 minutes.
Preheat the oven with baking tray to 220°C.
Place ciabatta on parchment paper.
Bake the first 10 minutes at 220 °C.
Then bake for another 10-15 minutes at a temperature of 180-200 °C.
Very nice and crusty bread!
You will definitely like it!

Quem fizer esta receita tenham em conta que o fermento mais adequado será o fresco de barra como o no vídeo e a farinha de muita boa qualidade na casa das 13g de proteína, esta farinha é designada como farinha de força. As farinhas ditas normais que se situam na casa das 10g de proteína nunca mas nunca chegam ao ponto deste pão todo alveolado, é uma receita um bocado chata para se fazer porque exige uma fermentação longa.

I am so happy I found this recipe. I'm in Louisiana where everything is Cajun and I love Ciabatta bread and the stuff they sell in the grocery store is garbage. Nicely done! I’m making Ciabatta now, only it’s similar but I use less yeast and ferment overnight. That mixer works perfect. May I ask what brand it is? I have a mixer with dough hooks but it’s too fast on low speed.

@Галина Сыскова Здравствуйте! Я все делала строго по рецепту. Всего 400 мл воды, из которых 100 - берете для закваски. Муку я использую казахскую Дильноз или Цесна. Тесто получается гуще чем на оладушки. Но оно прям как на видео будет вытягиваться. Будут пузыри) Удачи! Обращайтесь

Hi, Thank you so much for the video. I think it kind-of solves the riddle "how are those flexible airy Ciabatta breads made"? Few notes though. 1) What kind of Flour do you use? some high-gluten bread-flour? "Cake" flour? hard wheat? soft? Second - for some reason the German subtitles are visible at all time - even when English titles are on, and then you see them both overlapping - makes it really hard to read. Thank you again!

It's amazing the high number of German-English cognates when it comes to baking bread. Brot = Bread, Backen = bake, Mischen = Mixing, Falzen = Fold, Ofens = oven. Mehl = Meal, which was the common English word for flower before the French showed up. We still use it today when talking about corn meal (a very coarse corn flour). Even Teig for dough is a cognate. Dough comes from Old English dāg. We've all been baking bread a very long time, back when we were all speaking some sort of proto german, which is why the words are still so close today. Always fascinating.

Thats not the case specifically for baking bread, but the languages as a whole. Simply explained, they both originate from the Germanic Language (Proto Germanic -> West Germanic which then splits into Anglo-Frisian (English-Frisian) and Netherlandic German (Dutch-German) ) French f.e. stems originally from Latin tho later gets influenced by Germanic Tribes after rome falls.

Thank you for this recipe. I had many trials to make such bread, this is first one which was successful. Smell is typical from Chiabatta, taste is typical Ciabatta. We ate with lot of pleasure. But is more work, than usual yeast dough. Even though I learned, this extra work is worth

Nice Ciabatta Buns. I assume the dough could be cut into only 2 pieces to make 2 larger Ciabatta Bread Loaves. Obviously it would depend on the size of your oven.

I noticed when I added the 500g of flour (about 2 cups and 1 Tbsp), that mine was still a bit watery, so I added a Third cup, about 236 g of flour...not sure how this will turn out, but it looks more like you show in the video. I will update.

It turned out really nice with the 1/2 cup extra flour. I think the bubbles in the bread could be more distributed, so may be that is due to the extra flour, but the ciabatta are delicious!!!

I researched another chiabatta recipe and the amount of flour to water was 5 to 4 ratio, so I think I should have used a half cup less, but hopefully this is a forgiving recipe.
