This famous Swedish cake is a real taste delight! The dough made from ground almonds and fluffy egg white offers a light, delicately crispy consistency. ❗️ Attention, I recommend using ingredients in grams as this is a more accurate and correct recipe! * Cup = 200 ml
140 g (5 oz) almonds, ground
Separate 4 egg whites from the yolks
4 egg whites
a pinch of salt
1/4 tsp cream of tartar
80 g (5 tbsp) sugar
Beat until stiff peaks form
add ground almonds
Place in two even 20cm molds.
Bake at 180°C / 350°F for 25 minutes
4 egg yolks
70 g (4 tbsp) sugar
1 tsp vanilla
100 ml (1/2 cup / 3.5 oz) heavy cream
heat and stir until thickened
Allow to cool before mixing with the butter
125 g (7 tbsp) butter at room temperature
150 g (5.2 oz) flaked almonds, toasted
Assemble the cake like in the video
Let the cake rest in the refrigerator for at least 2 hours before serving
